The preservatives that turn pork pink, keep deli meat from spoiling, and give cured products their characteristic tang. Effective at preventing botulism — but the trade-off has become hard to ignore.

Why we flag them

When sodium nitrite is exposed to high heat or stomach acid, it can react with amino acids in meat to form nitrosamines — a family of compounds that are well-established carcinogens in animal studies. In 2015 the World Health Organization's International Agency for Research on Cancer classified processed meat (almost all of which contains added nitrites or nitrates) as a Group 1 carcinogen — the same category as tobacco smoking, putting it alongside the most certain cancer-causing substances we know of.

One important nuance: vegetables like spinach and beets contain naturally occurring nitrates, and those don't carry the same risk because they come packaged with antioxidants like vitamin C that block nitrosamine formation. The problem is concentrated synthetic nitrites added to high-protein, high-heat cured meats.

Where you'll find them

Anywhere meat is cured, smoked, or shelf-stabilized:

Watch out for the "uncured" label trap: products labeled "uncured" or "no added nitrites" are usually cured with celery juice powder or sea salt — which contain just as much naturally occurring nitrate. They're not actually cleaner.

What to look for instead

The honest answer is to eat cured meats less often, and choose better when you do:

USDA Organic certification doesn't outright ban nitrites, but most organic cured products avoid them by using celery powder instead — which still has the same chemistry. Read carefully.
